Eat UP: Falafel Waffle

So in an effort to expand my cooking chops, I attempted to make one of my favorite Middle Eastern street dishes, Falafel. But you know me, I don’t just make things the way most other people do, I have to put my own spin on it. So I make them on the waffle iron. Check it out:



  • 1/3 cup olive oil 
  • Olive oil cooking spray
  • 3 table spoons of chopped parsley
  • 2 table spoons of flour 
  • 1 tea spoon of baking powder
  • 1/4 tea spoon of sea salt
  • 1 tea spoon of ground cumin
  • 1/2 tea spoon of  ground coriander
  • 1 table spoon of minched garlic 
  • 2 egg whites (Kitchen Hax video on how to seperate yolks from the whites is coming soon)
  • 1 can of chickpeas (garbanzo beans), drained, rinsed and dried
  • 2 table spoons of Greek yogurt
  • 3 diced grape tomatoes 


  • Combine all ingredients into blender, food processor or Magic Bullet
  • Pulse until batter is fully mixed (if you can still see whole chick peas, then you should keep mixing)
  • Spray waffle iron with non stick olive oil cooking spray
  • Pour batter onto hot waffle iron but leave the last row around the edges empty (the batter will spread out on its own
  • Be sure to pour a good amount so that the waffles are thick
  • Close and lock iron
  • Cook until waffles are golden brown (about 5 minutes)
  • Put Greek yogurt into bowl and garnish with diced tomatoes
  • Enjoy
